The Best Ribs

1/4 cup paprika
1/4 cup blackpepper
1/4 cup kosher (course)salt
1/3 cup brown sugar
4 tsp. garlic powder
4 tsp. cayenne pepper
4 tsp. dried oregano
4 tsp. dried thyme
*Secret!! 4 tsp. ketchup popcorn flavoring
Remove any large clumps of fat from the top side of the ribs. Turn the rack over and slice off the flap, or skirt. The fat you find will come away easily when you get under it with a fork or knife.
Now firmly press the rub on ribs to make it stick. Turn the rack over and do the same thin on the underside.
Turn the racks on their sides (ribs sticking up to the ceiling) and form a circle by joining each edge together. The rack should stand on it’s own. Push a bamboo scewer through the joined edges, right through the rack and into the opposide side of the “rib circle”
Place on oven sheet (line with foil for easy clean up) or on the BBQ.
First 45 minutes cook at 350. Then turn the oven down to 200 and bake for another 2.5 – 3 hours.
